Step 1: Preliminary:
Chicken after cleaning, wash, rub with salt and rinse with water again.
Minced garlic cloves, thinly sliced ginger.
Lotus seeds, shiitake mushrooms are washed and soaked.
Scallions remove roots, white stems cut about 3cm, the rest is finely chopped.
