Ingredient:

  • Fresh squid: 500gr
  • Ginger: 1 piece
  • Green onion, red horn pepper, garlic, fresh lemon, onionHerbs
  • Spice

Step 1: Prepare and marinate squid

  • Squid cleans the intestines, washed with water mixed with ginger to deodorize.
  • Marinate squid with 1 tablespoon fish sauce, 1 teaspoon seasoning seeds, ½ teaspoon MSG and leave for 20 minutes to absorb spices.

Step 2: Prepare other ingredients

  • Peeled and crushed ginger. Scallions washed and cut into bite-sized pieces.
  • Peel the onion, soak in cold water to reduce the pungent smell and drain.
  • Peeled garlic
  • Squeeze lemon juice
  • Hot chili peppers, split in half, remove seeds, and cut into strips
  • Herbs, washed and drained

Step 2: Steam the ink

Turn on the fryer, put the squid in and select the STEAM mode at 100oC for 30 minutes to steam (depending on the amount of squid you cook, adjust the steaming time differently)

Step 3: Make sweet and sour fish sauce

  • Put chili, ginger, garlic, sugar in the mortar and grind
  • Add 3 tablespoons fish sauce, 2 tablespoons lemon juice, 1 tablespoon water and stir well.
