Ingredient:

Chicken: 1 chicken
Ginger: 1 piece
Fresh chili: 1 fruit
Lemongrass: 8 branches
Purple onion, garlic
Lemon leaves: 10 leaves
Lemon: left
Turmeric powder: 1 teaspoon
Garlic powder: 1 tablespoon
Fish sauce: 1 tablespoon
Grain salt: 500gr
Common spices

Step 1: Prepare ingredients

  • Remove all the internal organs, wash the chicken through dilute salt water, rinse with water and then drain.
    Lemongrass washed, smashed, cut into pieces.
    Peel and slice ginger.
    Lemon leaves washed, chopped 1-2 leaves.
    Wash peppers, remove stems.
    Red onion and garlic peeled.

Step 2: Marinate the chicken

  • Make a mixture of:  1 teaspoon of turmeric powder, 1 tablespoon of garlic powder, 1 tablespoon of sugar, 1 tablespoon of seasoning, 1 tablespoon of fish sauce, 1 tablespoon of salt and rub all over the chicken.
    Insert 1/2 part of ginger, red onion, garlic, and 3 smashed lemongrass branches into the chicken’s belly.

Step 3: Steam the chicken

  • Spread a layer of foil on a baking tray, place the chicken in, add 500g of salt, lime leaves, 5 lemongrass branches, and the rest of ginger.
    Roll up the foil and put everything in the Dreamer superheated steam fryer, choose STEAM mode to steam chicken at 150oC for 20 minutes.
