Ingredient:

  • Wheat flour number 11: 500gr
  • White sugar: 5 tablespoons
  • Salt: 1 teaspoon
  • Yeast: 8gr
  • Chicken eggs: 1 egg
  • Unsalted butter: 90g (divided into two equal parts)
  • Fresh milk without sugar: 280ml
  • Sausage: 24 pieces

Step 1: Mix the dough

  • Put in a bowl of the mixture: 500g of flour, 5 tablespoons of sugar, 1 teaspoon of salt and 8 grams of yeast and mix well.
  • Add 280ml unsweetened fresh milk and 1 egg into the flour, then use a whisk to mix the mixture until it forms a mass.

Step 2: Knead the dough

  • Put 45g of unsalted butter on the dough just made, fold it in half and then use your hands to press and spread the dough to the outside (do not have to press the dough down).
  • Rotate the dough 90 degrees, then continue to put the remaining 45g of unsalted butter on the dough and do the same for about 15 minutes for the dough to be flexible, smooth, elastic and not sticky to your hands.

Step 3: Incubate the dough

  • Brush a thin layer of cooking oil on the bottom and sides of a large bowl, then put the dough into the bowl, flip the dough until the oil is evenly absorbed.
  • Cover the dough with plastic wrap and then incubate the dough at room temperature (25-32 degrees C) for about 1 hour until the dough has doubled in size.
  • You can check if the dough has tempered enough by pressing deeply into the dough with your hand, if the indentation stays the same, then it has enough incubation, if the indentation swells again, it must be tempered.

Step 4: Roll the cake

  • Divide the dough into 24 parts, about 40g each, separate each part and let the dough rest for 20 minutes.’
  • Seize each part of the dough into long strands.
  • Place the sausage in the direction of cutting across the dough and then roll it up, the dough will wrap along the sausage.
  • Wrap the sausage rolls in cling film and place in a warm, humid place to double the dough around the sausage.

Step 5: Bake the cake

  • Preheat the superheater with PREHEAT mode at 180 degrees C for 10 minutes.
  • Place the cake on a baking tray lined with parchment paper, spread a thin layer of egg on the surface of the cake and then put it in the oven.
  • Select TOAST mode to bake, adjust 180 degrees C in 15 minutes to complete.
