Ingredient:

  • 1 Snakehead
  • Lemongrass 20 gr
  • Galangal 20 gr
  • Ginger 20 gr
  • Turmeric 20 gr
  • Seasoning seeds 1 teaspoon
  • 1 tbsp batch
  • Shrimp paste 1 tbsp

Step 1: Prepare ingredients

– Snakehead fish: clean the fish scales, especially the white veins on the sides of the fish to remove the fishy smell. Wash fish with dilute salt water and rinse with clean water 1-2 times.

When the fish has drained, use a knife to cut the fish body so that the seasoning can penetrate more.

Step 2: Make seasoning mixture to marinate fish

– Galangal, ginger and lemongrass chopped and then pureed

– Add the fish to the blended mixture, add seasoning, shrimp paste and batches, mix well and leave for about 40-60 minutes.

Step 3: Bake fish with superheated steam fryer

– Preheat oven to 180oC for 5 minutes.

– After preheating the oven, put the fish in, select the FISH mode and bake at 180 degrees Celsius for 20 minutes.

The dish is served with sweet and sour fish sauce and raw vegetables
