Ingredient:

  • Duck: 1 duck
  • Squeezed orange juice: fruit
  • Lemongrass: 2-3 branches
  • Purple onion: 4-5 pieces
  • Garlic powder, ground pepper
  • Five flavors, fish sauce, oyster sauce, chili sauce, ketchup

Step 1: Prepare duck

Clean the duck with salt and lemon/vinegar to get rid of the bad smell, then rinse with water and use a toothpick to tattoo the duck to let the spices penetrate.
Rub evenly on mixed duck meat including: ½ orange juice, lemongrass and minced onion, 1 teaspoon garlic powder, ½ teaspoon pepper, 2 tablespoons fish sauce, 1 tablespoon oyster sauce, 3 teaspoons chili sauce, 1 pack of five spices and 1 tbsp of ketchup.
Marinate for 4-6 hours (can be left overnight to save time)

Step 2: Bake duck with Dreamer Super Heat Fryer

Remove the lemongrass from the duck before grilling (to avoid burning the lemongrass)
Put the meat into the fryer, choose the CHICKEN mode at 200oC for 15 minutes (Watch the meat in the oven to adjust the time, the right temperature for the duck to cook evenly).
Flip and bake for another 5-7 minutes at 160oC -180oC.

Remove the duck from the oven, cut into bite-sized pieces and serve with herbs, garlic chili sauce.
