How to cook Hue beef noodle soup with Hue flavor

Hue beef noodle soup is a dish with many nutritional values, and good for health. This is also a popular dish in all regions. However, not everyone can make this dish properly, keeping its characteristic flavor. Here is the  recipe to make Hue beef noodle soup  delicious and full of Hue flavor right at home.

Ingredient:

Beef: 500g, Beef tendon: 3 ounces

– Spring rolls: 1 pc (choose the ham first)

– Tube bone (pork or beef): 500g.

– Hue fish sauce

– Spices: lemongrass, ginger, dried shallot, garlic, paprika, seasoning powder, sugar, cashew oil.

– Vermicelli: 400g

– Raw vegetables (coriander, coriander, bean sprouts, fresh onion, Thai banana flower)

Making:

Step 1:

Step 2:

Heat a pot of boiling water for beef bones and calves, encrusted with beef, beef tendons, and pork legs in the ceiling (remove all the foam to make the dish look nice)

Step 3: Marinate the meat

Step 4:  Stew meat and bones:

Line 3 lemongrass plants and ½ amount of ginger at the bottom of the Dreamer multi-function pressure connector, add pork bones and pork loin, put ginseng juice on the meat, close the lid and lock the valve. Adjust the fractional pressure on the control panel and bring to a boil  then lower the fractional pressure to low and cook for another 5 minutes. Remove the pork belly to a bowl of cold water (this will make the meat firm and not mushy).

Lined the remaining lemongrass and ginger at the bottom of the Dreamer multi-function pressure cooker, add beef, beef and beef tendon, and put the ginseng juice on the side of the meat. Then close the lid and lock the valve, adjust the pressure as above and bring to a boil, then lower the pressure and cook for another 20 minutes. At that time, we take out the beef and put the beef in a bowl of cold water to make the meat firm.

Step 5: Cook the broth

The beef broth and bone broth are poured into 1 pot, then add cold water to fit 5 liters of water.

Close the lid and close the valve, seasoning: 3 tablespoons fish sauce, 2 tablespoons salt, 2 tablespoons sugar, 2 teaspoons MSG, diluted Hue fish sauce. Taste and adjust seasoning to taste.

*Note: To make the broth fragrant and beautiful: Heat 2 tablespoons of oil, saute 1.5 tablespoons of minced lemongrass, 1 tablespoon of minced garlic. When lemongrass and garlic are firm and fragrant, add 2-3 tablespoons of cashew oil and turn off the heat.

Now just pour this mixture into the pot of simmering bone broth.

Step 6:  Presentation:

Prepare coriander: Finely chop some laksa leaves, onions, cilantro and thinly slice the onion.

Sliced pork, vermicelli through boiling water to create softness for noodles.
